Chef de Brigade Executive Chef: Fabio Silva
Since March 1st 2011 Fabio Silva is the Executive Chef of the Hotel de la Ville in Monza and its renowned Derby Grill restaurant. Neapolitan and 33 years old, Fabio graduated at the Hotel Management School “Cavalcanti” in Naples and began his professional career covering, with commitment and merit in qualified Italian hotels and restaurants, all cuisine lines, from garde-manger to first and main courses and also pastry, still his passion. Today Fabio studies and realizes the menus with a great sensibility and a particular care for the evolution of cuisine trends that he perceives by attending assiduously fairs and professional training courses. Talented, enthusiastic, responsible and with a remarkable sense of organization, with a particular dedication for the culture of products, Fabio Silva has been awarded by the most prestigious Gourmet Guides for his cuisine with a strong character and respectful of the territory.
